Ingredients

  • 1/2 cup walnuts halves
  • 1/2 cup non-fat yogurt
  • 2 tablespoons light mayonnaise
  • 2 tablespoons minced fresh flat-leaf parsley
  • 1 teaspoon honey
  • 1/2 lemon, zest finely grated
  • Freshly ground black pepper
  • 2 large crisp apples, such as Gala
  • 2 ribs celery (with leaves), sliced into 1/2-inch-thick pieces (leaves chopped)
  • 1/4 cup golden raisins
  • 1/2 lemon, juiced
  • 1 head Boston lettuce, trimmed, washed, and dried

Directions

Preheat the oven to 350 degree F.

Spread the nuts on a baking sheet and toast in the oven for 8 to 10 minutes. Cool and break the nuts up into small pieces.

Whisk the yogurt, mayonnaise, parsley, honey, and lemon zest in a large bowl and season generously with pepper.

Halve, core, and cut the apples into 3/4-inch pieces, leaving the skin intact. Add the apples, celery and raisins to the bowl, and sprinkle with the lemon juice; then toss with the dressing. Cover and refrigerate if not serving immediately.

When ready to serve, toss walnuts into the salad. Arrange the lettuce leaves on a large platter, or divide them among 4 salad plates. Place the salad on the lettuce and serve.

    Best Waldorf Salad

Rated: 5 stars out of 5
I made this salad today. I substituted pecans for walnuts because two of the people who will be at a 4th of July party... tomorrow can't eat walnuts. I only had Vanilla Activa ff yogurt so I used that & it was terrific. I left out the parsley - I just didnt want any green flecks in it & I used two kinds of apples, gala and a Granny Smith. This is one of the BEST tasting salads; I can't wait to try it out on friends tomorrow. Read more

    very tasty!

This was a great recipe. I do have to agree that I feel better about using real ingredients rather than low fat substitutes... so I tried this with the amazing greek yogurt that I find at Whole Foods that has honey in it and then did not add the honey that the recipe calls for and I did not use any mayo. I also added some fresh grapes in addition to the raisins since they are just one of my favorite fruits. My husband loved it and he is hard to please!Read more

    Good as a Healthy Alternative

Rated: 4 stars out of 5
I doubled the recipe for Thanksgiving and thought the dressing was a bit runny. I think I'd use more mayonnaise and honey... and less yogurt and lemon juice next time. I like the suggestion of dried cranberries and also thought halved, red seedless grapes might be a nice alternative to golden raisins (my grocery store didn't carry golden raisins). And maybe a pinch of nutmeg. A good, healthy, foundational recipe to start with. Read more

    Don't bother

Non-fat yogurt? Lite mayonnaise? Get real... and use real food instead of processed nutritional substances. The other... combination of ingredients seem reasonable, but next time, I'll make my own mayonnaise from scratch and use dried cranberries instead of golden raisins.Read more
