Ingredients
- 1/2 cup walnuts halves
- 1/2 cup non-fat yogurt
- 2 tablespoons light mayonnaise
- 2 tablespoons minced fresh flat-leaf parsley
- 1 teaspoon honey
- 1/2 lemon, zest finely grated
- Freshly ground black pepper
- 2 large crisp apples, such as Gala
- 2 ribs celery (with leaves), sliced into 1/2-inch-thick pieces (leaves chopped)
- 1/4 cup golden raisins
- 1/2 lemon, juiced
- 1 head Boston lettuce, trimmed, washed, and dried
Directions
Preheat the oven to 350 degree F.
Spread the nuts on a baking sheet and toast in the oven for 8 to 10 minutes. Cool and break the nuts up into small pieces.
Whisk the yogurt, mayonnaise, parsley, honey, and lemon zest in a large bowl and season generously with pepper.
Halve, core, and cut the apples into 3/4-inch pieces, leaving the skin intact. Add the apples, celery and raisins to the bowl, and sprinkle with the lemon juice; then toss with the dressing. Cover and refrigerate if not serving immediately.
When ready to serve, toss walnuts into the salad. Arrange the lettuce leaves on a large platter, or divide them among 4 salad plates. Place the salad on the lettuce and serve.

I tweaked it a little, I used a raspberry walnut cranberry salad topping instead of just walnuts. I used yogurt with cherries on the bottom but only the yogurt not the cherries. I substituted grapes for raisins. Omitted parsley, lemon zest and lettuce. I also doubled the "sauce" ingredients. So yummy!

I made this recipe times 4 for a low-fat themed work luncheon. People loved it. I added grape halves and left out the parsley. The lemon zest was a little strong, but some people liked that. I only put a small amount of pepper, that may have cut some of the lemon taste. All in all, everyone was very happy with it. I mixed the wet ingredients except lemon juice ahead of time and cut the fruit except the apples into another container. At work I cut up the apples and sprinkled with lemon juice, then mixed with the sauce and other fruit. It was easy.

This salad is amazing - I couldn't stop eating it! I didn't have all the ingredients (raisins & walnuts but I did use another chopped up nut and I am sure you could use any nuts in this recipe because its the dressing that truly makes this salad kick-butt! I did mess up a bit & didn't dry off the lettuce (which I actually used arugula & baby romaine mixed which made the dressing probably a lot more liquidy than I wanted...
