Waldorf Salad

Ingredients

6 cups packaged broccoli slaw

4 cups chopped Granny Smith apple (about 4 small)

4 cups chopped or shredded skinless, boneless white breast meat from a rotisserie chicken (or 3/4 cups dark meat per cup)

1 cup halved seedless grapes

3/4 cup plain nonfat yogurt

1/4 cup crumbled blue cheese

1/4 cup lemon juice

1/4 cup walnuts, chopped

Freshly ground black pepper

8 cups mixed greens

Directions

  1. In a large bowl, combine the slaw, apples, chicken, grapes, yogurt, blue cheese, lemon juice and walnuts. Season with black pepper. Serve the salad over the mixed greens.
