Charring citrus lightly brings out a deeper sweetness that infuses this cocktail with flavor. The honey-thyme simple syrup adds a lovely sweet floral and herbal note. Be sure to save any extra for other cocktails or to even use on a fruit salad.
In a cocktail shaker filled with ice, add the bourbon, Charred Grapefruit Juice and Honey-Thyme Simple Syrup. Shake vigorously to mix the ingredients well. Strain into a lowball glass filled with ice. Garnish with grapefruit zest.
Charred Grapefruit Juice:
Yield:1/2 cup
Set the oven rack in the top two thirds of the oven. Heat the broiler on high. Place both grapefruit halves flesh-side up on a baking sheet. Broiler until the flesh is charred, 5 to 8 minutes. Set aside to let cool. Squeeze the juice through a fine mesh strainer into a clean container.
Honey-Thyme Simple Syrup:
Yield:1/3 cup
Combine the water, honey and thyme in a small saucepan. Heat over medium-low heat, stirring, until simmering and the honey dissolves, about 5 minutes. Allow to cool. Remove and discard the thyme.
