Ingredients

  • 1 quart plain low-fat yogurt
  • 1/4 cup raisins
  • 1/4 cup chopped walnuts
  • 1 1/2 teaspoons pure vanilla extract
  • 1/4 cup good honey
  • 1 orange, zest grated
  • 1/2 to 1 cup freshly squeezed orange juice
  • Orange, orange zest, raisins and walnuts, for garnish (optional)

Directions

Line a sieve with cheesecloth or paper towels and suspend it over a bowl. Pour the yogurt into the sieve and allow it to drain, refrigerated, for 3 hours or overnight.

Place the thickened yogurt into a medium bowl and stir in the raisins, walnuts, vanilla, honey, and orange zest. Thin with orange juice until it is a desirable consistency. Garnish with sections of orange, orange zest, raisins, or walnuts and serve.

    Loved it! I saw a recipe where you cut out an orange to look like a jack-o-lantern. I filled it with a slight variation of this recipe. I was too lazy to strain - so it started oozing out the cutout mouth. Kinda cute.

    Made this tonight for a baby shower brunch tomorrow. Hmmm, should have made a double recipe because I am really wanting to eat a big bowl right now -- and I haven't even added the walnuts and raisins yet! Very yummy.

    Only changes I made were: used French Vanilla from Stoneyfield Farms because they didn't have regular vanilla (I still added the vanilla extract, no orange zest cuz I had no oranges, and I used Just Orange High Pulp Grove Style orange juice instead of fresh squeezed.

    I typically don't touch yogurt for breakfast because it has a too sour taste, but this would be something I would be all too willing to eat on a regular basis for breakfast.

    I make this every chance I get! i use raw honey instead of the regular honey. I make batches of this and keep in fridge, I love how simple the recipe is yet so delicious! Ina Garten always has wonderful recipes.
