Giada’s Secret Ingredient Makes Everything Better
You’re going to want to stash a few gallons of this in the freezer.

This weekend on Instagram, Giada posted about one of her favorite ingredients: Parmesan Broth. According to Giada, this simple brew using the remnants of parmesan rinds (you’re freezing them, right?!) will be the new “it” ingredient.
“You heard it here first: parmesan broth is the new bone broth!” She writes. “Everyone should have this in their freezer to break out on a cold rainy day to make seriously amazing risottos, soups and stews.”
To make Parmesan Broth or Parmesan Brodo, simmer one pound of Parmesan rinds with celery, onion, garlic and herbs, the same way you would simmer chicken bones to make stock. You can then use in place of chicken stock or freeze for later use. Giada calls it her secret ingredient in soups, stews and risotto. She says it adds more flavor than vegetable stock. Feel free to experiment, or even drink it as tea, we won't tell!
