When I was a little girl the only soup I would eat was chicken noodle. I was THAT picky eater who favored plain and simple — unaware she was missing out on so many great foods. As I got older, I became more adventurous with my dishes (thank goodness!) and realized I was no longer that basic-chicken-noodle-soup girl. If anything, I was the very opposite of that... I had become a flavor-seeking-French-onion-soup girl.

While chicken noodle will always be a comforting standby, French onion soup is chock full of hearty flavors and savory seasonings that I can't resist. From its rich, meaty base and sweet caramelized onions to its buttery toasted bread and melted gruyere cheese this soup is deliciously exciting. Like many other foods that awakened my tastebuds, French onion soup taught me to love flavor — and all the bold and exciting ways that it can inspire dishes like burgers, casseroles, mac and cheese and more!

A simmering pot of beef AND chicken stock helps develop and enhance the flavors of the thinly sliced onions. When it comes to the bread topping for this soup, there are many variations but this one calls for crispy ciabatta cubes that are toppled over the bowl of soup along with the grated cheese.

One bite of this burger and you’ll be in love. It’s deliciously similar to its namesake soup. It’s got the caramelized onions, gruyere cheese and perfect little touches — like the bun that soaks up all the flavorful juices.
