Chocolate-Covered Apple Slices

Ingredients

1 cup semisweet chocolate chips

2 tablespoons coconut oil 

1 Granny Smith apple 

1/4 cup chopped peanuts 

1/4 cup shredded coconut 

Directions

  1. Melt the chocolate chips and coconut oil together over a double boiler. Line a baking sheet with parchment paper or wax paper.
  2. Slice the apple into 1/4-inch-thick slices. Dip the apple slices one at a time into the chocolate, making sure to coat them evenly. The chocolate should go at least three-quarters of the way up each apple slice. Let the excess chocolate drip off.
  3. Press one side of each slice into the peanuts or coconut, and place the slices non-peanut/coconut-side down on the parchment. Place in the fridge or freezer until the chocolate hardens, 10 to 15 minutes. Serve.

These were great, easy to make and they look pretty! I used non-dairy chocolate so these are a great vegan alternative to the caramel apples that are popular this time of year.  Next time I might try it without the coconut oil since that makes them melt faster when you pull them out of the fridge.
