Cornbread Stuffing

3 cups cornbread mix, prepared as directed, cooled then crumbled

1 medium onion, small dice

2 stalks celery, minced

1/2 cup chicken broth

1/2 cup pecans, chopped

1/2 cup dried cranberries

1/2 tsp. poultry seasoning

2 tbsp. butter


  1. In a saute pan, saute onions and celery in butter. Stir until translucent. Pour in chicken stock, bring to a simmer. Off the heat combine the rest of ingredients. Serve alongside Sam's Club rotisserie chicken.;
