Ingredients

5 fresh mint leaves plus 1 large sprig, for garnish

1 ounce pineapple juice 

2 ounces vodka 

1/2 ounce agave 

1 lemon wheel 

2 ounces lemon kombucha 

Directions

  1. In a shaker, muddle the mint leaves with the pineapple juice. Add the vodka and agave. Add 1 ice cube to the shaker, cover and shake.
  2. Strain into a tall glass filled with large ice cubes. Garnish with the mint sprig and lemon wheel. Top with a float of kombucha.

Light, refreshing, not too sweet, perfect on a hot day.  And it flies together.  You could use lemon-ginger kombucha or another flavor compatible with mint and pineapple to top off the drink.
