Chilled Cantaloupe and Mint Soup

Ingredients

1 cantaloupe, seeds and rind removed, cut into chunks

2 tablespoons fresh mint, minced 

1 lime, juiced 

Salt to taste 

Directions

  1. In a blender, combine all ingredients and blend until smooth. Pour into a sealable container and chill for at least 3 hours and up to overnight. Shake well and pour into serving dishes.
