One of the oldest restaurants in Lexington, Alfalfa showcases local ingredients in healthy-ish presentations. Their Hoppin’ John is idiosyncratic and vegetarian, with brown rice topped with lightly seasoned black-eyed peas, a layer of diced canned tomatoes and a trio of toppings: chopped fresh onions, bell peppers and grated white cheddar cheese.
