Gabriele Bonci, a former chef, launched himself into baking at a young age, but only began following his true passion with the opening of Pizzarium in 2004. This 500-square-foot shop serves Rome’s ubiquitous street foods, including pizza by the slice and supplì — rice croquettes that Bonci has elevated to an art form through the use of exquisite artisan flours and other top-notch ingredients.
