Chef John Novi has been serving meals at the historic DePuy Canal House in High Falls, New York, for more than 30 years. He uses local Hudson River Valley ingredients to create dishes such as a hearty choucroute with meat and sauerkraut, and a souffle that Bobby says is "so simple, it's genius."
