If you’ve never tried them, baked grits take on an almost custardy, almost cakey texture and they couldn’t be easier to prepare. We kept it simple and simply added a little bit of scallion, but you could add your favorite cheese, cooked and crumbled bacon or sausage, or herbs.
Cook 1 minced garlic clove and 4 chopped scallions in butter in a saucepan until softened. Add a pinch each of nutmeg, cayenne, salt and pepper. Add 2 cups each water and whole milk; bring to a boil. Stir in 1 cup quick-cooking grits; return to a boil. Reduce the heat and stir until thickened, 3 to 4 minutes. Stir in 3 tablespoons butter. Cool slightly. Whisk in 2 eggs. Pour into a buttered 2-quart baking dish. Bake at 400˚ F until golden, 35 to 40 minutes.
