Special equipment:
a charcoal grill or rotisserie; a probe thermometer
Using a large bowl, stir together the cold water and salt. Add the chicken and cover with plastic wrap. Refrigerate for 24 hours before marinating.
For the marinade: Meanwhile, in a medium bowl, stir together the pineapple juice, onion puree, soda, oyster sauce, soy sauce, granulated garlic, lemongrass powder, smoked paprika, sugar, black pepper and salt and mix until incorporated. Refrigerate.
Remove the chicken from the brine and transfer to a large bowl. Pour in the marinade and massage the chicken with the marinade. Refrigerate for 24 hours.
Using a charcoal grill or rotisserie, cook the chicken until it reaches the internal temperature of 175 to 180 degrees F with the use of a probe thermometer, 40 to 45 minutes. If using a grill, make sure to turn each side constantly for even cooking and color. Let rest 10 to 15 minutes, then carve.
Cook’s Note
To better lock in the marinade with the chicken, use a vacuum seal bag to speed up the marinating process. By doing this method you can use your chicken after 1 to 2 hours of marinating time.
