This easy stir-fry is built for nights when dinner needs to be fast with minimal prep. The air fryer cooks the shrimp and frozen vegetables in minutes, while a simple, crowd-pleasing sauce of honey, soy, garlic and ginger brings everything together. Serve over rice for a balanced and filling meal.

Directions
Special equipment:
a 6-quart air fryer
Stir together the shrimp, 1 tablespoon of the soy sauce and 1 teaspoon of the cornstarch in a medium bowl until evenly coated. Add 1 tablespoon of the canola oil and mix again. Marinate at room temperature for 15 minutes.
Meanwhile, prepare the sauce: Whisk together the honey, oyster sauce, sambal, ginger, sesame oil, garlic, remaining 3 tablespoons soy sauce, remaining 1 teaspoon cornstarch and 2 tablespoons water in a large microwave-safe bowl; set aside.
Toss the frozen vegetables with the remaining 1 tablespoon canola oil and a pinch of salt in a bowl. Spread the vegetables in the air fryer basket and cook at 400 degrees F until heated through, about 3 minutes (see Cook’s Note).
Arrange the shrimp and baby corn on top of the vegetables. Cook, turning the shrimp halfway through, until pink and cooked through, 5 to 6 minutes.
Meanwhile, whisk the sauce again and microwave until hot and lightly thickened, 1 1/2 to 2 1/2 minutes. Add the cooked shrimp and vegetables and stir to coat. Serve with steamed rice and sprinkle with scallions and sesame seeds.
