Cottage Cheese Tiramisu

This version of the Italian layered dessert swaps some of the traditional cream for a smooth, silky filling lower in fat and higher in protein than classic tiramisu. We whip 2-percent cottage cheese with creamy mascarpone for a rich, tangy filling for layering with coffee-soaked ladyfingers. A dusting of cocoa powder finishes this beautiful, healthy treat that easily feeds a crowd. And with just about 20 minutes of prep and a few hours of chilling needed it’s a make-ahead dream.

  1. Combine the cottage cheese and brown sugar in a food processor and blend until smooth, about 1 minute. Add the mascarpone and vanilla bean paste and process until just combined. Transfer to a bowl, cover and refrigerate until ready to use.
  2. Whisk the coffee and maple syrup together in a container large enough to dip the ladyfingers in. Dust 1 teaspoon of cocoa powder over the bottom of an 8-inch-square baking dish. Dip half of the ladyfingers into the coffee mixture until soaked but not soggy, about 2 seconds per side, then arrange in the bottom of the dish (break off an end of some of the fingers as needed so they fit in the dish). Spread half the cottage cheese mixture over the fingers. Repeat with the remaining ladyfingers and spread the other half of the filling on top.
  3. Cover the dish and refrigerate for at least 4 hours and up to overnight. When ready to serve, dust the remaining 1 tablespoon of cocoa powder over the top.
