Fried Green Tomatoes with Crab Ravigote and Rémoulade

Green tomatoes are firmer and less juicy than super-ripe red tomatoes, so they can stand up well to the high heat of deep frying. I like to pair them with a creamy seafood salad, like crab ravigote. The brightness of the tomatoes balances the richness of the mayonnaise and mustard in the classic New Orleans crab dish.

  1. For the crab ravigote: Mix together the mayonnaise, parsley, tarragon, capers, Creole mustard, Dijon, cayenne, garlic, green and red bell peppers, celery and lemon juice in a medium bowl. Gently fold in the crabmeat. Cover and refrigerate until ready to use for up to 24 hours.
  2. For the remoulade: Mix together the mayonnaise, ketchup, horseradish, Creole mustard, parsley, Creole seasoning, lemon juice, white wine vinegar, cayenne and paprika in a medium bowl. Cover and refrigerate until ready to use for up to 5 days.
  3. For the charred corn relish: Place the corn directly over the burner of a gas stove, or on a hot grill. Cook, turning often, until charred, about 2 minutes. Transfer to a cutting board and let cool for about 10 minutes. Cut the corn kernels from the cobs and place in a small bowl. Add the radish, olive oil, cilantro, Fresno chiles, the zest of the lime and the juice of 1/2 of the lime. Stir together, cover and refrigerate until ready to use for up to 3 days.
  4. For the fried green tomatoes: Pour enough oil to fill a large cast-iron skillet about a third of the way. Heat over medium heat until a deep-fry thermometer inserted in the oil reaches 325 degrees F. Season the tomatoes on both sides with 1 teaspoon salt and 1/2 teaspoon black pepper. Combine the flour and Creole seasoning in a shallow bowl. Put the buttermilk in another shallow bowl. Dip the tomatoes in the flour mixture, followed by the buttermilk, then the flour mixture again. Working in batches, fry the tomatoes until crispy, about 1 1/2 minutes per side. Drain on a wire rack and sprinkle with salt.
  5. To serve: Put 1/4 cup of the Rémoulade in the center of each dinner plate. Stagger 2 slices of the Fried Green Tomatoes on top of the sauce. Top with 1/2 cup of the Crab Ravigote, then add 1/2 cup of the Charred Corn Relish. Finish with the microgreens.
