Fry up the sausage. Add to the gravy, along with all the drippings. Put this aside on low heat.
Form the ground sirloin into six patties. Dip in the flour, then press them into a bun-sized shape using your hand. Cook them in some of the oil in a pan or on a flattop griddle at 350 to 375 degrees F until the flour dissipates, then turn over and add a slice of Swiss cheese. When the cheese has melted down the side of the patty, it is done.
In a separate pan, cook an egg anyway you like. Over easy is my favorite. For the buns, grill them with a little butter to get them crisp. Put the patty on a grilled bun, then add the egg on top with the gravy and finish with jalapeños on top. You have a Hey Jay! Repeat to make more burgers.
