Zucchini and Goat Cheese Pinwheels

Ingredients

4 ounces cream cheese

4 ounces goat cheese 

1/2 cup chopped sun-dried tomatoes 

1/2 cup chopped thawed and well-drained frozen spinach

8 fresh basil leaves, chopped 

1 clove garlic, minced 

Kosher salt and freshly ground black pepper 

2 long zucchini, thinly sliced lengthwise 

Directions

  1. In a medium bowl, use a fork to mash the cream cheese and goat cheese until combined. Mix in the sun-dried tomatoes, spinach, basil and garlic. Season with salt and pepper.
  2. To assemble the pinwheels, spread a heaping teaspoon of the cheese mixture onto each zucchini slice. Starting at one end, roll the zucchini towards the other end. Place the pinwheels upright on a serving tray.

I not a huge fan of goat cheese and didn't use the cream cheese, I used shallot and chive Boursin Cheese for half of them and the red chili pepper Boursin Cheese for the other half.  VERY VERY good!
