Directions
In a large pan, heat the garlic oil with a drizzle of extra-virgin olive oil. Add some parsley and the cherry tomatoes, letting them wilt gently. Add the mussels, clams, scampi, prawns, squid, shrimp and octopus, letting them brown briefly. Add a little white wine, letting the alcohol evaporate. At this point, add the Shrimp Bisque and the tomato sauce, just to add a touch of color. In the meantime, cook the pasta in salted water, draining it about 3 minutes before the end of cooking. Transfer the pasta to the pan with the sauce, mixing well until the sauce is well bound and creamy. Serve immediately. Garnish with the pepper, the remaining parsley and a drizzle of olive oil.
Shrimp Bisque
Sauté the vegetables with tomato paste, then add the shrimp heads and deglaze with the white wine. Add 5 tablespoons of cold water and 5 tablespoons of ice and cook for about 50 minutes. Strain the mixture with a sieve; the bisque is ready.
