Soft Bakes You'll Want to Dig Right Into
When life feels hard and heavy, I like to think soft. I cue up my chill, cheer-up playlist, slip on my cushiest pair of socks and head to the kitchen to whip up some comfort food. While savory recipes that remind me of mom (think: mac and cheese or chicken noodle soup) are good for the soul, I’ve found that the ultimate Rx is something sweet and gooey. Perhaps this is the underbaked cookie-loving kid in me (risking it with raw eggs was about as rebellious as I got!). But I still have a sweet spot for gooey-centered recipes like luscious lava cake, custard and marshmallow-stuffed cookies. Soft like I wish the world would be, treats like these are the ultimate food hug.
Bake sales aren’t technically a competition. Still, Smitten Kitchen’s Deb Perelman (and we!) can’t resist bringing our best to try to steal the show. The next time you’re in need of a surefire hit, turn to this easy bar cookie recipe that starts with a classic shortbread crust and finishes with a chewy, gooey chocolate chip and oat topping. If you’re a fan of the flavor, feel free to stir in ½ cup shredded coconut.
