We developed this recipe to produce nicely browned, super-soft cookies with a chocolatey gooey center every time. Using only standard pantry ingredients and straightforward steps, the dough comes together in minutes — no need to plan ahead for softening the butter or bringing eggs to room temperature, and pre-chilling the dough isn’t necessary. Just mix, scoop and bake. You’ll be rewarded with generously sized, deliciously soft cookies with bakery-style looks and texture but 100-percent homemade taste.

  1. Position an oven rack in the center of the oven and preheat to 450 degrees F. Line a baking sheet with parchment paper and set aside.
  2. Whisk the flour, cornstarch, baking soda and salt together in a medium bowl. Set aside.
  3. Beat the butter, granulated sugar and brown sugar together in a large bowl with an electric mixer on medium speed until just combined and no chunks of butter remain, 2 to 3 minutes. Scrape down the bottom and sides of the bowl with a rubber spatula. Beat in the egg and vanilla on medium speed until combined (it’s okay if the mixture looks curdled). Beat in the flour mixture on low speed until no spots of flour remain and a thick dough forms. Beat in the chocolate chips until evenly distributed.
  4. Divide the dough into 6 even pieces; each should be about 5 ounces on a food scale, or you can measure by packing dough into a 1/2-cup dry measure. Roll each piece into a ball. Arrange the balls on the prepared baking sheet about 3 inches apart.
  5. Bake until evenly browned all over, 11 to 13 minutes, rotating the pan halfway through. Remove from the oven and let cool on the pan set on a wire rack until the edges are set, about 10 minutes. Transfer the cookies with a thin spatula onto the rack to cool until just warm.
