Our Best Ideas for Stuffed Shells

If you never forgot about stuffed shells, congratulations—you’re obviously winning at life. For the rest of us, why did these gooey, comfort food delights ever fall out of favor? But wait—before we go on the nostalgia tour with the tomato sauce, ricotta and mozz, that never hit a wrong note, just think of all the directions these scrumptious baked pasta vessels can take your family dinner tonight. Forget decorative gourd season—we hereby anoint cozy season, wintry season, hygge season: stuffed shell season.

Looking for somewhere to start? This recipe has all the components of a home run: the tomato sauce, a savory ricotta filling flecked with fresh parsley and the shells, soft and yielding in some spots, toasted and crisp at the tips. But here’s the best part: No par-boiling of the pasta is necessary. A relatively watery sauce (made by just adding water) and a tight foil top allows the pasta to cook right in the casserole, absorbing the flavorful liquid and rendering this (our favorite) a one-pan dinner.

Chicken Alfredo Stuffed Shells

Eaten even over plain pasta, this leek-infused chicken alfredo is perhaps the best in its class. Stuff it inside some pasta shells, however, and those toasty tips and fresh chives just take it to a whole other level.

Stuffed Shells with Chorizo Pumpkin Cream Sauce

And these are the ones you trot out when you have guests to impress. First off, let’s just agree that all dishes that contain chorizo are the most delicious. And that super-savory sausage is complemented with a cheesy pumpkin sauce and dotted with pesto. Oof, it’s impossible not to love it.

Chicken Parmesan Stuffed Shells

Chicken parm with pasta on the side? Sure, it’s a no-brainer. But tucking the parm right inside the shells is just fun. And starting with chicken tenders from the freezer case speeds up the process, too.

Shrimp Scampi Stuffed Shells

That combination of plump, sweet shrimp and lots of wine and garlic need no PR campaign. This one requires no side of crusty bread, since it layers all that garlicky, lemony shrimp right inside the shells and blankets the whole baking dish with a creamy sauce. Best of all? Ree Drummond knows that when your food requires maybe more prep than usual, you want maximum payoff. So this recipe yields one casserole for the freezer, and a second one for you and seven other lucky eaters.

Mushroom-Spinach Stuffed Shells

We love this veggie-laden version of shells, given plenty of textural interest with mushrooms and spinach. A duo of sauces—one super-quick tomato sauce, and one cheese sauce—keep the layers going with richness and so much flavor.

Mac and Cheese-Stuffed Shells

This riotous version of mac and cheese just aims to please. Even the visuals! Tiny shells within larger shells? Hilarious! But it’s not just a culinary pun. It’s got cream cheese and American for unctuousness, Cheddar for sharpness, a little dry mustard and paprika for some bite, and crushed cheese crackers on top for crunch. What’s not to love?

Collard Green Stuffed Shells

If you’re looking for some Carolina flair stuffed inside pasta shells, look no further than your muse of all things Low Country, Kardea Brown. Collards stand in for the more common spinach, and a genuine gravy, in the Southern sense of the word, made from tomatoes and meat, will have you stuffing yourself full of shells.

Stuffed Shells Bolognese

This might be the product of a dreamy situation where the chef in the kitchen with the lasagne tray collides with the chef making the stuffed shells. These give serious lasagne vibes, with a quick, rich meaty sauce, but stuffed into shells rather than layered with noodles.

Butternut Squash-Stuffed Shells

If you’re looking for a really different incarnation for stuffed shells, now we’re getting somewhere. These take shells on a genuinely sophisticated journey, with butternut squash and spinach mingling with warming spices, fresh sage and thyme. But don’t worry, they’re topped with mozzarella, so they’re no less ooey-gooey than their more tomato-forward cousins.

Sausage-Spinach Stuffed Shells

These shells get a little extra staying-power from bits of sausage and spinach concealed within. Silky cheese sauce envelops the shells, and dots of marinara sauce cut the richness with a nice bit of tang.
