Red bean is a common dessert flavor in Asian cuisine. It is smooth, nutty, mild and has enough personality to be a crowd pleaser, so it’s the perfect flavor for a snacking cake, which is a cake that comes together quickly and doesn’t require multiple layers. Directions
Preheat the oven to 350 degrees F. Grease an 8-inch square metal baking pan and line with enough parchment to allow 1-inch wings on two opposite sides.
In a large bowl, whisk together the oil, butter, and sugars, and zest. Whisk in the eggs, then the vanilla. Whisk in the yogurt and red bean paste. Sprinkle the all-purpose flour, baking powder and salt evenly over the top and give them a rough little whisk before incorporating into the batter. Transfer to the prepared pan, then bake until a toothpick stuck into the center comes out clean and the center of the cake is springy to the touch; begin checking at 35 minutes.
Let cool completely.
Make the glaze. In a medium bowl, combine the powdered sugar, yogurt, and vanilla, and mix until smooth, adding more yogurt if needed to create a thick but spreadable consistency.
Spread the glaze all over the cake and decorate to your heart’s content!
