Burnt ends are flavorful, tender, barbecued nuggets of meat, made from beef brisket. Ree likes to serve them BBQ restaurant-style, with bread and pickles, enabling everyone to make their own sandwiches. It’s always a big hit with the cowboys!

Directions
Preheat the oven to 275 degrees F. Line a sheet pan with foil and top with a baking grate.
Add the cubed beef to a large bowl. Add the mustard and toss to coat. Sprinkle with the barbecue rub and toss. Add the beef to the grate over the sheet pan and place in the oven. Roast for 3 hours, then cover with foil and continue to roast for another hour.
Remove from the oven and transfer the pieces to a large baking dish. Toss with the barbecue sauce and brown sugar. Return to the oven and cook until the meat is falling apart, tender and caramelized, 1 hour 15 minutes to 1 hour 30 minutes.
Remove, then serve on a quarter-sheet tray lined with parchment paper, along with the bread, pickles, onions and a little extra barbecue sauce.
