Spicy Candied Hazelnut Chex and Popcorn Snack Mix

This sweet-and-spicy snack mix combines Chex cereal, buttery popcorn, toasted hazelnuts and pretzels, all coated in a light caramel glaze. The treat is finished with toasted sesame seeds, flaky sea salt and Aleppo pepper flakes.

Directions

  1. For the snack mix: Lightly coat a very large mixing bowl with nonstick cooking spray. Add the Rice Chex cereal, popcorn, hazelnuts and pretzel pieces. Toss to evenly distribute. Set aside.
  2. For the caramel coating: Combine the sugar, water and lemon juice in a medium heavy-bottom saucepan over medium heat. Cook without stirring but occasionally swirling the pan until the sugar dissolves and turns a deep amber color, 8 to 10 minutes.
  3. Slowly drizzle the caramel over the snack mix while continuously tossing with a large spoon. Continue tossing until the mixture is evenly coated and lightly glazed.
  4. For the seasoning: Immediately sprinkle the toasted sesame seeds, flaky sea salt and Aleppo pepper over the warm cereal mixture. Toss thoroughly to distribute the seasonings before the caramel sets.
  5. Spread the snack mix onto parchment-lined baking sheets in an even layer. Allow to cool completely, breaking apart any large clusters as needed. You can pile the snack mix into a large serving bowl or divide it among individual snack cups. Garnish with an additional sprinkle of toasted sesame seeds and a pinch of Aleppo pepper if you like.

Cook’s Note

Work quickly once the caramel reaches the proper color and you begin drizzling. It will harden quickly when it hits the snack mix. Lightly spraying the bowl with cooking spray helps prevent the caramel from sticking to the sides and allows for even coating.
