For the honey dijonnaise: Add the mayonnaise, Dijon mustard and honey to a mixing bowl and mix until uniform. Add 1 tablespoon parsley to the bowl and mix again. Adjust the amounts after a taste test to get the desired flavor. Transfer to a squeeze bottle for easy application to the burger buns or use a spoon to spread over the burger buns.
For the smash burgers: Portion the ground beef into 3-ounce meatballs. (If you buy prepackaged burgers, mix them together in a bowl in order to portion out equal-sized meatballs.)
Bring a pan or griddle to medium-high heat. Add a tablespoon of butter to the griddle and add two mounds sliced yellow onions to cook until color appears, 1 to 2 minutes.
Add 1 meatball to each mound of yellow onion, and with a burger press or flat spatula, press the meatballs firmly into the onion mound until as thin as desired. For crispy edges, after the initial press, press the sides of the newly formed burger patty with a scraping motion to flatten out as thin as possible. When smashing, using a piece of parchment paper between the meat and the burger press helps the burger to not stick to your utensil. Sprinkle a dash of salt and pepper onto the patty and let it cook for 1 to 2 minutes. Flip the burger patties and seared onions so that the onions are on top while the other sides of the patties cook. Add a slice of American cheese to each patty to let it melt during cooking, 1 to 2 minutes.
Meanwhile, toast a bun on the griddle or in a pan by adding a tablespoon of butter and letting the bun sit face down, about 2 minutes.
To plate the burger, take a toasted brioche bun and spread about 1/4 cup (total) honey dijonnaise on both sides. On the bottom, add 2 dill pickle chips, then top with the two burger patties with cheese and smashed onion. Add a leaf of romaine and slice of Roma tomato. Top the burger with the bun top. Repeat the process to make 3 more burgers.
