Ingredients

  • 4 whole-wheat tortillas (6- inches in diameter)
  • 2 medium tomatoes, seeded and chopped
  • 1/4 cup coarsely chopped pitted calamata olives
  • 1/4 cup freshly grated Parmesan
  • 2 tablespoons fresh basil leaves
  • Freshly ground black pepper

Directions

Preheat the oven to 400 degrees F.

Put the tortillas onto a baking sheet and top each with tomatoes and olives. Sprinkle some cheese on top of each pizza and bake for 10 minutes.

Garnish each pizza with torn basil leaves and season with pepper. Allow pizza to cool for a few minutes then slice each tortilla into 4 wedges.

    i'm a little confused. is the serving size on the nutrition for the "main dish" 2 servings or "appetizer" 4 servings?

    I thought this was a pretty good recipe - couldn't decide whether it deserved four or five stars. It was definitely tasty, but not as extraordinary as Ellie's arugula, red onion, and goat cheese pizza. The olives were great here, but the tortilla made a super-thin crust and I prefer my crust a little thicker. I would make this one again though.

    I made this using Joseph's Oat Bran, Flax and Whole Wheat Tortillas that have only 5 net grams of carbs per tortilla. I drizzled with olive oil after I took it out of the oven and also sprinkled with salt. Don't be shy with the parmesan cheese and you will love this! The only thing I want to try to avoid next time is the sogginess in the very center or the tortilla, but I will definitely make this again!
