We'll Take This Sheet Pan Shrimp Dinner Over Scampi All Summer
Don't worry, there's still plenty of garlic butter.

Sure, we love Shrimp Scampi all the ways, but summer always has us craving something on the lighter, fresher side. It's the season of perfect produce — ripe tomatoes, juicy corn — and we want to highlight it in every meal we eat. Luckily, this one-pan dinner is the ideal weeknight solution when you want the garlicky goodness of scampi with the taste of summertime.
Fresh corn and shrimp are the stars of this sheet pan supper made for summer. Every ingredient is fresh and totally seasonal. You won't find better corn, tomatoes or fennel any other time of year. Toss fresh corn and fennel with olive oil, red pepper flakes and salt before broiling in the oven for a few minutes. While that's cooking, you'll coat shrimp and summer tomatoes in garlic, butter and lemon for a scampi-esque flavor. Then you'll add that to the sheet pan to broil for a few minutes more.
The result is Garlic Butter Shrimp and Corn Sheet Pan Dinner. Serve it up with crusty bread and a glass of crisp white wine and eat outside. You'll feel easy, breezy and totally pleased with your time-saving skills.
