When it comes to frozen sweets, you just can’t beat an ice cream sandwich. The iconic treats are one of our favorite summertime desserts and they go a long way in helping you cool down when temperatures skyrocket. Though you can easily buy a box of ice cream sandwiches at your local grocery store, making them from scratch is actually a lot of fun. And, if you happen to have a standard 9-by-13 or 18-by-13-inch sheet pan at your disposal, they’re really easy to put together too. Here are five sheet pan ice cream sandwich recipes we can’t wait to churn out (see what we did there?) all summer long!
Marbled Brioche Ice Cream Sandwiches (pictured above)
Just take a second to admire the breathtaking beauty of these multicolored ice cream sandwiches. Inspired by the classic Italian dessert “brioche con gelato,” the stunning treats are stuffed full of nutty pistachio and chocolate chip ice creams, as well as swirls of raspberry sorbet to satisfy any and all frozen dessert cravings. To give your brioche sandwiches the same mod-like design as the ones pictured above, be sure to scoop your ice cream and sorbet out using variously sized tablespoons and measuring cups.
