When it comes to frozen sweets, you just can’t beat an ice cream sandwich. The iconic treats are one of our favorite summertime desserts and they go a long way in helping you cool down when temperatures skyrocket. Though you can easily buy a box of ice cream sandwiches at your local grocery store, making them from scratch is actually a lot of fun. And, if you happen to have a standard 9-by-13 or 18-by-13-inch sheet pan at your disposal, they’re really easy to put together too. Here are five sheet pan ice cream sandwich recipes we can’t wait to churn out (see what we did there?) all summer long!

Just take a second to admire the breathtaking beauty of these multicolored ice cream sandwiches. Inspired by the classic Italian dessert “brioche con gelato,” the stunning treats are stuffed full of nutty pistachio and chocolate chip ice creams, as well as swirls of raspberry sorbet to satisfy any and all frozen dessert cravings. To give your brioche sandwiches the same mod-like design as the ones pictured above, be sure to scoop your ice cream and sorbet out using variously sized tablespoons and measuring cups.

Anyone who has ever had the pleasure of sipping on a hot or iced mocha knows that chocolate and coffee make a yummy pairing. Food Network Kitchen reimagined that delicious duo with these super decadent brownie sammies. Packed inside each one, you’ll find buzzy coffee-flavored ice cream. The outer edges of the sandwiches are also covered in chopped up chocolate-covered espresso beans for a surprise crunch that’s very reminiscent of those chocolate crunchies you loved as a kid! If espresso beans aren’t your thing, chocolate sprinkles or crushed up sandwich cookies work just as nicely.

If you’re someone who always struggles to choose between cookie dough and cookies ‘n’ cream whenever you go to your local ice cream shop, these fudgy frozen sandos were made with you in mind. You’ll find both — yes, both! of the iconic ice cream flavors housed inside. Chocolate cake lovers will also appreciate the sandwiches’ chewy top and bottom layers, which contain robust notes of cocoa and instant espresso powder.

Snickerdoodles aren’t just for the holidays. In fact, these delectable ice cream treats turn the beloved Christmas cookies into the quintessential warm weather snack. Like all the other recipes on this list, you’ll bake a giant version of the cinnamon sugar cookie first; you’ll then halve it and layer it with dulce de leche or vanilla bean ice cream. If your cookie still looks a little soft in texture after you pull it out of the oven, don’t worry — it'll continue to firm up as it cools. For a double-dose of spice, go ahead and fill them with this heavenly homemade Cinnamon Ice Cream from Ree Drummond.

Brownies, chocolate chip cookies, Oreos and vanilla ice cream: those are all the deletable goodies you'll find layered inside these over-the-top ice cream sandwiches. Though the hybrid treats need to be placed in the freezer twice once after baking your cookie and brownie layers and then again after spreading your ice cream inside the end result is the stuff dreams are made of. Another plus — most of the ingredients are also pantry, refrigerator and freezer staples, so this recipe makes a fun, kid-friendly activity for days when those dreaded summer thunderstorms pop up out of nowhere.
