Waffled Grilled Cheese and Tomato Soup

Ingredients

4 slices Cheddar

4 slices sandwich bread

2 whole dill pickles, thinly sliced lengthwise

16 ounces prepared tomato soup, hot

Directions

  1. Preheat a waffle iron.
  2. Place a slice of cheese on one slice of bread and cover with a layer of sliced pickles. Place another slice of cheese on top of the pickles and cover with a slice of bread. Make a second panini in the same manner.
  3. Place the panini in the waffle iron and cook for 2 to 3 minutes.
  4. Slice the panini in half or on a diagonal to make triangles. Serve immediately, or pack into insulated lunch containers for a hot lunch on the go.
  5. Divide the soup into two bowls or additional insulated lunch containers.
