Professional pastry chef Buddy Valastro reveals nine frequent blunders made by home bakers and the reason why each misstep yields problematic results.

Baker Don't: Be unaware of actual oven temperature.

Baker Do: Invest in an oven thermometer to confirm the temperature.

Baker Don't: Make the wrong substitutions.

Baker Do: Pay attention to the differences between baking powder and baking soda.

Baker Don't: Cook without heart.

Baker Do: Be passionate about what you're making. "You can taste the difference," Buddy says.

Baker Don't: Forget to read the recipe from beginning to end before starting.

Baker Do: Understand the progression of the recipe. "This will help give you a better idea of how to manage your time in the kitchen," notes Buddy.

Baker Do: "Have a rough idea of what you’re trying to accomplish," advises Buddy.

Baker Don't: Mix ingredients out of order.

Baker Do: Add ingredients one at a time to yield desired results.

Baker Don't: Attempt to experiment without understanding the science of pastry.

Baker Do: Take risks, but do so carefully and when you’re fully informed.

Baker Don't: Lose your patience.

Baker Do: Take your time.

Baker Don’t: Avoid asking questions or looking for clarity when a term or ingredient isn’t understood.

Baker Do: Consult a cookbook that you trust or search online.
