Blackened Catfish

1 ounce salad oil

2 (5 to 8-ounce) catfish fillets

2 ounces fish blackening seasoning


  1. Heat a 12-inch cast iron skillet over high heat. When the skillet is hot, add the oil. Season both sides of each catfish fillet with the blackening seasoning and place in skillet. Cook fillets for 5 minutes on each side.
