  1. For the togarashi mayo: Place the mayonnaise, sriracha, sugar, rice wine vinegar, togarashi, mirin and sesame oil in a bowl and mix thoroughly.
  2. For the tempura batter: In a bowl, combine the tempura flour, ginger, smoked paprika, black pepper, red pepper flakes, salt, togarashi, beer and 1/2 cup water and mix thoroughly. Keep nice and cold, preferably over ice.
  3. For the avocado sauce: Place the cilantro (including the stems), tomatillos, avocado, serrano, lime juice, salt and 1 cup water in a blender and blend until smooth; adjust the seasoning if needed.
  4. For the tacos: Preheat the oil to 350 degrees F.
  5. Dredge the fish in the batter and carefully drop it into the fryer oil. (Depending on the size of the pot, do not drop too much fish at once; it may cause the oil to drop in temperature, or even worse, overflow; be very careful when working with hot oil.) Remove the fish when golden brown and crispy with a slotted spoon to a cooling rack.
  6. In a pan or comal, place the tortillas to heat up. Garnish with a bed of cabbage on the tortilla, then drizzle the avocado salsa on the cabbage. Place your beautiful crispy fish on the taco and drizzle the togarashi mayo on top; garnish with cilantro and lime.

To make the best and juiciest fish tacos, head to your local fish market and request clean and pin-bones-removed rock cod. Portion them to the size of your liking.
