A homemade blueberry-mint syrup gives this refreshing highball its vibrant berry flavor and garden-fresh aroma. Shaken with vodka and bright lemon juice, then topped with crisp cola for a touch of caramel sweetness and lively bubbles, the Blueberry Harbor is a simple yet striking cocktail that's perfect for warm-weather entertaining. Make the syrup ahead of time and keep it refrigerated for up to one week, so happy hour is just a shake away. Garnish with a sprig of mint and skewered blueberries for a polished finish.

Directions

  1. For the blueberry-mint syrup: Combine the blueberries, sugar and 1 cup water in a small saucepan over medium heat and bring to a boil. Reduce to a simmer and cook, stirring occasionally, until the berries begin to burst and release their juices, about 5 minutes. Lightly mash the berries with the back of a spoon to extract more flavor. Stir in the mint leaves, remove from the heat and set aside to steep for 15 to 20 minutes.
  2. Strain the syrup through a fine-mesh strainer into a clean heatproof container, gently pressing on the solids to extract as much liquid as possible. Discard the solids. Let cool completely, about 30 minutes.
  3. For the cocktail: Add the vodka, lemon juice and 1/4 cup of the blueberry-mint syrup to a cocktail shaker and add a generous amount of ice. Seal the shaker tightly and shake vigorously until the outside is completely frosted and cold, about 15 seconds.
  4. Add fresh ice cubes to a chilled pint glass and strain in the cocktail. Top with the cola and garnish with a mint sprig and blueberries skewered on a cocktail pick.
  5. Store the remaining blueberry syrup in an airtight container in the refrigerator for up to 1 week.
