Directions
Special equipment:
a silicone baking mat
Line a baking sheet with a silicone baking mat. Put the semisweet chocolate in a microwave-safe bowl. Microwave at 50 percent power for 1 minute. Stir, then microwave at 30-second intervals, stirring in between, until melted and smooth. Spread with an offset spatula in an even layer about 1/8-inch thick. Place in the refrigerator until set, about 15 minutes.
Meanwhile, put the white and blue candy wafers in separate microwave-safe bowls. Add a tablespoon of vegetable or coconut oil to each. One bowl at a time, microwave at 50 percent power for 30 seconds. Stir, then continue to microwave at 30-second intervals, stirring in between, until melted and smooth.
Dollop spoonfuls of the blue and white melted candy all over the set chocolate. Shake the pan back and forth until the candy spreads out and covers the top of the chocolate in a random mosaic-like pattern. Use a clean spatula or butter knife to swipe through the colors, making swirls here and there (don’t overmix). Top with the gelt and then sprinkle with the candy-coated chocolates and assorted candies and sprinkles. Place in the refrigerator to set, 15 to 20 minutes. Break or cut into shards to serve. Remove foil from the gelt before consuming.
