If you love Jell-O shots, up your Halloween celebration with playful Negroni-inspired gelatin cocktails served inside mini jack-o’-lanterns. These spooky treats come with a welcome trick: The grown-up flavors of Campari, sweet vermouth and gin are combined with fresh orange juice and unflavored gelatin and ladled into real orange shells, then carved with pumpkin faces after the gelatin sets. The spoonable cocktail has a bright, citrusy flavor that balances the cocktail’s haunting bitterness. It’s a charming treat with a boozy kick that makes any Halloween party a bit more festive.

  1. Supreme one orange by slicing off the top and bottom and then cutting down to remove the rind and any white pith in strips. Working over a small bowl, cut between the membrane and orange segments to release the segments. Let the segments and any juice fall into the bowl. Squeeze the core over the bowl to release any juice. Cut the orange segments into small pieces; set aside.
  2. Slice off about 1 inch from the tops of the remaining 6 oranges, where the orange starts to widen, and save the tops. If any oranges don’t sit upright without wobbling, slice a thin piece from the bottom to stabilize them while being careful not to cut any holes or openings in the shell. Place the oranges in a baking dish that holds them snugly.
  3. Run a paring knife along the inside edge of each orange (include some of the pith for a neater edge). Scoop out all the pulp and place in a large bowl. Mash the pulp with a potato masher or spoon, then strain it through a fine-mesh sieve, pushing on the solids to extract the juice. You should have at least 1 1/2 cups strained juice; if not, add some reserved juice from the orange segments to make up the difference.
  4. Sprinkle the gelatin over 1/2 cup of the orange juice in a small microwave-safe bowl; let sit 1 minute. Microwave for about 30 seconds, then stir until dissolved, pressing to break up any clumps. Stir the gelatin mixture into the remaining 1 cup orange juice until dissolved. Add the Campari, vermouth, gin, sugar and 1/3 cup water. Whisk until the sugar dissolves. Divide the Negroni mixture and drained chopped orange segments among the 6 orange shells. Refrigerate until the gelatin is set, at least 1 1/2 hours.
  5. Once the gelatin is set, use a craft knife to cut out jack-o’-lantern faces on the outside of the oranges using a craft knife or the tip of a paring knife. Cut out small holes in the stems of the reserved orange tops and insert a piece of green sour straw into each for a stem. When ready to serve, top each orange jack-o’-lantern with its corresponding top.
