This recipe puts a playful spin on the classic margarita with a cloud-like zero-sugar cola foam that floats on top like salty sea air. The bright, citrusy tequila cocktail is balanced by the lightly sweet, caramel notes of the airy foam, creating a surprisingly refreshing sip that's equal parts familiar and unexpected.

Directions

Special equipment:
an immersion blender
  1. For the foam: To flatten the cola, add it to a high-sided liquid measuring cup and whip with an immersion blender until the bubbles reduce, 30 seconds to 1 minute. Add the sucrose esters, lime juice, salt and 3 tablespoons plus 1 teaspoon water (50 grams). Place the immersion blender right below the surface of the liquid and blend to pull in air and create stable bubbles. Let the foam sit to stabilize, about 5 minutes; the structure will hold for about 30 minutes. (The foam is enough for 10 to 12 servings and can be refrigerated for up to 1 week. Use an immersion blender to refresh if needed.)
  2. For the margarita: Add the tequila, Cointreau, lime juice and agave to a cocktail shaker and add a generous amount of ice. Seal the shaker tightly and shake vigorously until the outside is completely frosted and cold, about 15 seconds.
  3. Add fresh ice cubes to a chilled rocks glass and strain in the cocktail. Spoon a layer of the airy foam directly on top of the cocktail, then float the dried lime on the foam.
