This simple yet sophisticated dessert makes the most of strawberries in three ways – fresh, freeze-dried and preserved. With just 4 grams of added sugar from strawberry jam, the natural sweetness of the berries shines through for a lower-sugar recipe that’s fruit-forward and satisfying (see Cook’s Note). The freeze-dried strawberries add an extra punch of flavor and a pretty pale pink hue, making the whipped cream look and taste indulgent without extra sugar. Easy to prepare yet special enough for entertaining, this dish is a beautiful way to celebrate strawberries.

Special equipment:
a spice grinder
Combine 1 tablespoon of the jam and the vinegar in a medium bowl and stir until smooth. Add the strawberries and a pinch of salt. Toss well and let the strawberries macerate at room temperature for 20 to 30 minutes.
Meanwhile, grind the freeze-dried strawberries to a powder in a spice grinder. Add to the bowl of a stand mixer fitted with the paddle attachment. Add the cream cheese, vanilla and remaining 2 tablespoons jam. Beat on medium-high speed until smooth and fluffy, scraping down the sides of the bowl once or twice, about 2 minutes. Add the heavy cream and switch to the whisk attachment. Whisk on medium-high speed until very light and the mixture holds almost firm peaks, about 1 minute.
Divide the strawberries among 4 bowls. Top with the strawberry cream and serve immediately.
