Heat the oil in a medium skillet over medium heat. Add the garlic, onion and ginger and saute until they begin to slightly brown, about 5 minutes. Add the chicken and cook, breaking it up with a wooden spoon, until cooked through. Add the garam masala, turmeric and a good pinch of salt and saute another 2 minutes. Add the tomato sauce and honey; continue to let simmer until slightly reduced and thickened, another 5 minutes. Give it another good pinch of salt to taste.
Serve with buns and garnish with fresh cilantro sprigs.
