  1. For the seasoned breadcrumbs: Combine the breadcrumbs, Pecorino-Romano, salt, pepper, parsley and granulated garlic in a bowl.
  2. For the seasoned flour: In a bowl, combine the flour, salt and pepper.
  3. For the seasoned egg: Beat the eggs in a bowl with the parsley, salt and pepper.
  4. For the chicken: Bring the vegetable oil to 350 degrees F in a skillet or frying pan fitted with a deep-fry thermometer. Meanwhile, dredge the chicken in the seasoned flour, then seasoned egg and finally seasoned breadcrumbs. Fry until cooked, about 4 minutes per side.
  5. For the vodka sauce: In a pan over medium-low heat, sauté the onions in olive oil until golden; add the bacon and ham. Add the vodka, if using, and allow to evaporate. Add the marinara and simmer for 2 to 3 minutes. Add the cream, Pecorino Romano and parsley.
  6. For the garlic spread: In a frying pan, melt the butter; set aside.
  7. In a sauté pan over medium-low heat, add the olive oil; cook the garlic for 1 to 2 minutes. Add the parsley, then remove from the heat. Transfer to a large bowl; combine with the melted butter. Stir in the grated Pecorino-Romano, oregano, salt and pepper.
  8. For assembly: Preheat the oven to 450 degrees F.
  9. Place the chicken on a baking sheet. Top each piece with about 2 tablespoons vodka sauce and 1/4 cup shredded mozzarella. Bake until the cheese is melted, about 5 minutes. Split the rolls and spread with the garlic spread. Toast in the oven 3 to 5 minutes. Top the rolls with the chicken. Serve with a side of more vodka sauce.
