Dubai Pistachio Cheesecake Coffee Cake

This is literally the best coffee cake I have ever had. It’s worth every step, and much, much more flavorful than the traditional Dubai chocolate.

Special equipment:
a 9-inch round springform pan
  1. For the cheesecake layer: In a bowl, combine the confectioners’ sugar, pistachio butter, cream cheese and vanilla extract. Mix until smooth. Set aside.
  2. For the cake: Preheat the oven to 350 degrees F and spray a 9-inch round springform pan with nonstick spray. Place it on a baking sheet.
  3. In a bowl, beat together the granulated sugar and butter until light and fluffy, about 3 minutes. Add the eggs, sour cream and vanilla extract. Mix until well incorporated. Gradually add the flour, baking powder, baking soda and salt. Mix until smooth. Stir in 1 cup of the ground pistachios.
  4. For the Dubai layer: In a medium sauté pan on low to medium heat, melt the butter. Add the kataifi and stir constantly until browned. Remove from the heat, then add the pistachio cream, mini chocolate chips and salt. Stir until incorporated. Set aside.
  5. Pour half of the cake batter into the prepared pan. Spread the cream cheese layer evenly over the top. Spread the kataifi topping over the cream cheese. Pour the remaining cake batter over the top.
  6. Bake until a toothpick inserted into the center comes out clean, 70 to 90 minutes. (If it gets too brown early, cover in foil for the remaining time.) Remove from the oven.
  7. While the cake is hot, sprinkle the remaining 1/2 cup ground pistachios over the top. Let cool completely, then unclasp the springform pan edge and serve.
