The Sandwich King's Ultimate Breakfast Sandwich

The ULTIMATE breakfast sandwich is the combination of the crispy hash brown and the folded cheesy eggs. The key to great folded cheesy eggs is a nice slick pan coated in butter and controlling your heat so you don't get too much color on the eggs and the cheese gets super gooey.

  1. For the spicy breakfast sausage: Mix together the brown sugar, sage, salt, black pepper, crushed red pepper, marjoram and cloves in a bowl, then combine with the pork until uniform. Combine into a log and let chill for 30 minutes or up to overnight.
  2. For the sandwich: Heat a small nonstick skillet over medium-high heat. Form a 3-ounce portion of the breakfast sausage into a patty. Smash directly into the skillet so it is a bit larger than the bun, and thin. Sear until caramelized and cooked through, 5 minutes a side. Set aside to drain. Repeat with another 3-ounce portion. (Save the remaining sausage for another use.)
  3. Clean the skillet and reduce heat to medium-low heat. Add 1 tablespoon butter and let melt, then add half of the seasoned egg and swirl to coat the entire bottom of the skillet. Let the egg set, then add 2 slices cheese in the middle. Fold up each quadrant of set eggs to cover the cheese, one at a time, to create a “square” of folded egg. Take off the heat and cover while assembling.
  4. Place a hash brown on a bun bottom, then top with the warm gooey folded egg, then the smashed sausage patty. Schmear some raspberry preserves on the bun top and close. Wrap in foil for one MAGIC MINUTE so that everything comes together. Repeat to make 1 more sandwich.
