Mango Fire Cheddar-Stuffed Chicken

Sweet heat meets tender grilled chicken in this bright and bold recipe. Boneless chicken is stuffed with spicy Cheddar flecked with sweet mango, then grilled to melty perfection and drizzled with a sticky ginger-soy-honey glaze. A mango-red pepper salsa tops it off with fresh fruit and a touch of lime.

  1. For the mango salsa: Combine the marmalade, basil, lime juice, garlic, mango, scallion and bell pepper in a large bowl. Season with salt and pepper to taste. Cover and refrigerate for at least 1 hour.
  2. For the chicken: Cut each chicken breast half with a sharp knife horizontally from the long side to within 1/4 inch of the edge.
  3. Combine the soy sauce, brown sugar, rice wine vinegar, sesame oil, honey, ginger and garlic in a bowl. Set aside 1/2 cup of the marinade; cover and refrigerate. Pour the remaining marinade into a large resealable plastic bag. Add the chicken to the bag, seal the bag and turn to coat. Refrigerate, turning occasionally, for at least 1 hour and up to 6 hours.
  4. Grease the grill grate with neutral oil; prepare the grill for medium heat.
  5. Remove the chicken from the marinade and pat dry with paper towels; discard the marinade. Lightly sprinkle the chicken with pepper. Open the chicken pieces and top half of each with 1/2 cup of the Cheddar. Fold the chicken over the filling; secure with toothpicks.
  6. Add the chicken to the grill, cover and cook until a thermometer inserted into the meat reads 165 degrees F, 5 to 7 minutes on each side. Transfer the chicken to a cutting board; tent with aluminum foil. Let rest for 10 minutes, then remove the toothpicks. Keep warm.
  7. Meanwhile, whisk the cornstarch, reserved marinade and 3 tablespoons cold water in a small saucepan over medium heat until smooth. Bring to a boil; cook, stirring, until thickened, 1 to 2 minutes. Remove from the heat.
  8. Serve the chicken with brown rice and the mango salsa. Drizzle with the sauce. Garnish with basil.
