No-Cook Tomato Sauce with Penne

Ingredients

12 ounces penne

1/4 cup virgin olive oil

6 tomatoes, diced

3 tablespoons balsamic vinegar

3 cloves garlic, minced

Fresh basil, chopped

Grated Parmesan cheese

Directions

  1. In a large pot of boiling salted water, cook the penne according to package directions. In a large bowl combine tomatoes, garlic, olive oil and vinegar. Toss together with basil. When tender, drain penne, add to bowl and toss to coat. Serve with fresh Parmesan cheese.
