But there’s something even more satisfying about knowing you can enjoy all of those same dishes at home for far less dough, all while customizing them with your favorite ingredients and avoiding the potentially-sticky menu or stool. (We can’t be the only ones who have accidentally sat in syrup!)

The recipes ahead will guide you through how to create copycats for all the classics, from pancakes at breakfast to patty melts at dinner…or after midnight. Your kitchen diner can be open 24/7 if you desire it to be so!

You’re just 22 minutes away from a stack of homemade pancakes that “fluff up over half an inch,” and “taste so much better than what you get out of a box,” home cooks verify. A few pantry and fridge staples and two secrets are all you need. First, utilize room-temperature eggs and milk, which emulsify well and capture more air to pump up the batter. Second, stop stirring the moment the batter comes together (a few small pockets of flour are A-OK!) so you don’t develop too much gluten which can lead to dense or flat flapjacks.
