Directions
Special equipment:
eight 3.8-ounce clear cups; a piping bag fitted with a large star tip
Place the gelatin powder in a large bowl. Heat 2 cups lemonade in a saucepan over medium-low heat until simmering. (Keep the remaining 2 cups lemonade cold.)
Once the lemonade is simmering, pour into the gelatin and whisk until the powder has dissolved. Add the remaining 2 cups cold lemonade and whisk to combine.
Place in the fridge and allow to set halfway (it will jiggle slightly), about 2 hours. Layer the gelatin among eight 3.8-ounce clear cups with a scattering of blueberries as well as 2 to 3 sharks.
Top the cups with more gelatin and place in the fridge to set for at least 4 hours or up to overnight.
When ready to serve, to the bowl of a stand mixer fitted with the whisk attachment, add the heavy cream. Whip on high speed until soft peaks form, then add the powdered sugar and continue whipping until stiff peaks form.
Place the whipped cream into a piping bag fitted with a large star tip. Pipe “waves” on one side of each gelatin cup and sprinkle with the blue sanding sugar. On the other side of the cup, sprinkle the finely ground vanilla wafers as sand. Top each with a sour gummy shark and serve.
