Ham salad is a staple in the South. It's like chicken salad, but with ham, and it's a great way to use up leftover ham. Here, I serve my ham salad in endive cups for an elegant presentation.

Directions
Stir together the mayonnaise, salad cubes, mustard, hot sauce, tarragon and House Seasoning in a large bowl. Add the ham, celery, eggs and white parts of the green onions and stir until combined.
Scoop the ham salad into the endive cups and garnish with the green parts of the green onions. Sprinkle with the smoked paprika.
Miss Brown’s House Seasoning:
Yield:5 teaspoons
Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container.
