Directions
Preheat a smoker or charcoal grill (for indirect heat) to 200 to 225 degrees F.
Whisk together the dried oregano, mustard powder, onion powder, dried parsley, salt, black pepper, white pepper, celery seed, crushed red pepper and dried thyme in a bowl, then whisk in the milk and eggs, followed by 90% of the barbecue sauce. Fold in the breadcrumbs to make a slurry. With a pair of rubber gloves or in a stand mixer, add the beef and pork. Mix well so that everything is incorporated.
On a perforated sheet pan or tight cookie rack, form a loaf 3 to 4 inches wide by 2 to 3 inches tall. Brush the top of the loaf with a little more barbecue sauce. Place in the smoker and smoke until your loaf reaches an internal temperature of 165 degrees F, about 2 hours. (The lower the temperature of the smoker, the deeper the smoke ring.) Let the loaf cool enough to be able to slice and hold its form, then enjoy. For the best sandwich yield, chill overnight, and portion when cold into about 1-inch slices (about 6 ounces each).
For sandwiches, on a hot grill, place the cold meatloaf slices down to get nice grill marks. Set off the direct heat and warm through. If cheese is desired, add the cheese and melt. Place on buns with desired toppings and serve!
